Whenever I have the time to chop up some onions when cooking, I cut up some extra, put it in a Ziploc bag, remove some air, seal it and freeze it.
Next time a recipe calls for onions, I take the bag of onions out to thaw for few minutes and toss what I need in the pan. No extra work needed and no need to get the cutting board and a knife and wash them afterwards.
You can also measure enough for one recipe then store them in small sandwich bags.
How to freeze onions:
- Peel onions, make horizontal and vertical cuts then chop.
- Put the chopped onions in a Ziploc bag
- Lay flat to get extra air out, seal, then freeze
