Ingredients:
1 Cup of white all-purpose flour
1 Cup of whole-wheat flour
1/4 Cup of unsweetened chocolate powder
1/4 tsp Baking Soda
1 tsp Baking powder
1/4 tsp of cinnamon (optional)
1/4 tsp salt
1/2 cup butter (1 stick)
3/4 Cup of brown sugar
2 eggs
3 ripe bananas
1 tsp vanilla extract (optional)
Chocolate chips or nuts (optional)
- Preheat oven to 350F
- Mix all the dry ingredients in one bowl then set aside
- Mash the bananas with a fork then set aside
- In another bowl, cream the softened butter with the sugar
- Add the eggs and vanilla to the butter-sugar mixture and mix at medium speed , then stir in the mashed bananas
- Fold the dry ingredients, about half a cup at a time into the banana-butter mixture.
- Fold in the nuts or chocolate chips
- Pour the batter in a greased (I use butter spray) loaf pan and bake for about 1 hour or until knife or toothpick inserted into center of bread comes out clean.
