If you are running out of time in the morning but would like to have a healthy and quick protein rich breakfast, try this recipe for egg scramble made in a coffee mug and cooked in the microwave.

Ingredients
- 2 eggs
- 2 tbsp of milk
- 2 tbsp of cheese (cheddar or feta or any other cheese you like)
Instructions
- Coat a Microwave-safe coffee mug with butter spray. Add the eggs, milk, cheese, with salt and pepper then beat until well blended.
- Microwave on high for 45 seconds, stir
- Microwave again for another 30 - 45 seconds until eggs are set.
- Sprinkle with extra cheese if you like.
