Dinner Menu:
Coconut lentil soup with homemade bread and spinach salad
Honey chicken with apple salad
Steamed cauliflower with curry over carrot rice
Chili soup and Corn bread
Carrot rice:
1 cup basmati rice
1 cup of water
2 grated carrots
1/4 thinly sliced onion
2 cloves of garlic chopped
1tsp mustard seeds
1 tsp cumin
1/4 tsp of turmeric
1/4 tsp of cinnamon (optional)
Rinse the rice then set aside in a bowl with enough water to cover it.
Heat oil, add mustard seeds and cumin seeds then cover until they start popping then add carrots and onions and cook until the onions are golden. Add spices then rice. Stir for a minute or two then add the salt and water (or chicken broth) and bring to a boil. Reduce heat to low and let simmer for about 10-15 mins. Once cooked, let stand for 5 minutes then fluff with a fork and serve

The carrot rice sounds really good but I have a question. When you say add the rice to the skillet, does that include the water it's sitting in? I'm guessing not since you add the salt water later and that's what the rice was sitting in. Could you clarify for me?

The rice needs to coat up with the oil first before you add the water and you do not need to boil the water or chicken broth before you add it afterwards. Make sure that you do use Basmati rice though.
