Ingredients:
1 lb Shrimp peeled and deveined
1 Spaghetti squash
1 jar of your favorite pasta sauce or 1 can of diced tomatoes
1 tsp of chili powder
1/2 tsp dried thyme or basil
1/2 Tbsp of butter
Butter or oil spray
Salt and pepper
Pepper flakes (optional)
Parmesan cheese (optional)
- Preheat oven to 375.
- Cut the squash in half lengthwise and take out the seeds. Rinse then spray with butter or oil spray or brush it with Olive oil and place on a baking sheet. Bake face down for 30-40 minutes.
- Five minutes before the squash is done, place the shrimp in a bowl then add the chili powder, pepper flakes (optional), dried thyme or basil, salt and pepper. Heat oil in a skillet then saute the shrimp for about 2-3 minutes. When done, add the pasta sauce or diced tomatoes.
- Take the squash from the oven and let it cool
- When the squash cools down (about 5 minutes), shred the inside with a fork or a spoon, add the butter, salt and pepper then mix.
- Serve like you would for a regular spaghetti (squash, pasta sauce, shrimp) and some parmesan cheese.
