Shrimp with roasted spaghetti squash

Prep time: 5 mins
Cook time: 45 mins

Ingredients:

1 lb Shrimp peeled and deveined
1 Spaghetti squash
1 jar of your favorite pasta sauce or 1 can of diced tomatoes
1 tsp of chili powder
1/2 tsp dried thyme or basil
1/2 Tbsp of butter
Butter or oil spray
Salt and pepper
Pepper flakes (optional)
Parmesan cheese (optional)


  • Preheat oven to 375.
  • Cut the squash in half lengthwise and take out the seeds. Rinse then spray with butter or oil spray or brush it with Olive oil and place on a baking sheet. Bake face down for 30-40 minutes.

  • Five minutes before the squash is done, place the shrimp in a bowl then add the chili powder, pepper flakes (optional), dried thyme or basil, salt and pepper. Heat oil in a skillet then saute the shrimp for about 2-3 minutes. When done, add the pasta sauce or diced tomatoes.

  • Take the squash from the oven and let it cool
  • When the squash cools down (about 5 minutes), shred the inside with a fork or a spoon, add the butter, salt and pepper then mix.

  • Serve like you would for a regular spaghetti (squash, pasta sauce, shrimp) and some parmesan cheese.

Menu Plan: Week of March 28th

Dinner Menu:


Coconut lentil soup with homemade bread and spinach salad
Chili soup and Corn bread

Carrot rice:

1 cup basmati rice
1 cup of water
2 grated carrots
1/4 thinly sliced onion
2 cloves of garlic chopped
1tsp mustard seeds
1 tsp cumin
1/4 tsp of turmeric
1/4 tsp of cinnamon (optional)

Rinse the rice then set aside in a bowl with enough water to cover it.
Heat oil, add mustard seeds and cumin seeds then cover until they start popping then add carrots and onions and cook until the onions are golden. Add spices then rice. Stir for a minute or two then add the salt and water (or chicken broth) and bring to a boil. Reduce heat to low and let simmer for about 10-15 mins. Once cooked, let stand for 5 minutes then fluff with a fork and serve
