This is a slow cooker recipe that take 5 minutes to prepare and 1 minute to devour :)
Ingredients:
2 lbs of chicken
1 can of lime and cilantro diced tomatoes like Rotel
Juice of 1 lime
1 can of corn or black beans
2 tsps chili powder
1tsp ground cumin
1/4 tsp of salt
Peppers (optional)
- Toss all the ingredients except the lime juice and corn in the slow cooker. I used some peppers and black beans but they are optional.
- Set on low or high. Add the corn and the lime juice when cooked. Shred the chicken then serve with tortillas, cheese and sour cream or over rice. Enjoy!
