Cook time: 20-30 mins
Serves 4 people
Ingredients:
1lb ground turkey
8oz Pasta ( I used cavatappi but any pasta should do)
2 peppers any color
2 Zucchini or yellow squash
Small white or yellow onion
2 cloves of garlic
1 tsp of chili powder or pepper flakes
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried basil
EVOO
salt and pepper
Parmesan cheese
- Preheat oven to 400
- Bring a large pot to boil, add the pasta, and cook for 8-10 minutes
- Saute the turkey with 1 tbsp EVOO then add the chili powder and/or pepper flakes
- Slice all the veggies lengthwise then put them in a roasting pan with the dried herbs, onions and garlic, salt and pepper. Drizzle with some olive oil then bake in oven for 20-30 minutes
- Toss pasta, ground turkey, and roasted vegetables together then serve with some parmesan cheese.
