Cooking time: 6-8 hrs in Slow cooker
Ingredients:
2 lbs of boneless beef chuck roast
1 Can of Diced tomatoes with chili
2 Tbsps of brown sugar
1/2 an onion chopped (used the onions from the freezer)
2 Zucchini diced or 1 Sweet potato cubed
1 tsp of garlic powder
1 Tbsp of chili powder
2 tsps of Cumin
2 tsps of dried Oregano
Salt and pepper to taste
Season the beef with the garlic powder, chili powder, Cumin, Oregano and place in a slow cooker.
Add the sugar, vegetables, onions to the slow cooker, then cover with the diced tomatoes. Add 1/4 Cup of water if needed
Cover and cook on low for 6-8 hours
Remove the beef, shred it, then put it back. Serve over egg noodles, pasta, or rice.
Tip: Use leftovers for a rice burrito.

Instructions
